Macadamia Coconut Balls

Kōkua Hawaiʻi Foundation Founder Jack Johnson and Chef and Kōkua Hawaiʻi Foundation Board Member Ed Kenney, teamed up and won first place at the Slow Food Nation Cook off in Denver last year featuring Macadamia Coconut Balls as one of their recipes. These healthy and delicious snacks are simple and fun to make with kids. They save well in the fridge, and are a really easy grab and go after school snack. Kids of all ages love making because they are fun to roll into shape. 


  1. 1 cup packed, soft pitted dates
  2. ¾ cup raw macadamia nuts
  3. ½ cup unsweetened fine coconut
  4. ⅛ tsp sea salt (optional)

** You can add a little flax seeds, chia seeds, too.


  1. Blend all ingredients until it forms a dough.
  2. Roll into balls and dust with more coconut.
  3. Store in the fridge.
  4. Makes 10 balls.
